Caribbean Jerk Chicken Skewers

What You Need

env. (0.7 oz.) GOOD SEASONS Italian Dressing Mix

Tbsp. brown sugar

Tbsp. oil

Tbsp. soy sauce

tsp. ground cinnamon

tsp. ground thyme

1/2

tsp. ground red pepper (cayenne)

1-1/2

lb. boneless skinless chicken breast halves, cut into 1-1/2 inch pieces

red bell peppers, cut into 1-1/2 inch pieces

fresh pineapple, cut into 1-1/2-inch chunks

Make It

MIX first 7 ingredients until well blended; pour over chicken in large bowl. Stir to evenly coat chicken. Refrigerate 30 min. to marinate.

HEAT grill to medium-high heat. Remove chicken from marinade; discard marinade. Thread chicken onto 12 skewers alternately with bell peppers and pineapple.

GRILL 15 min. or until chicken is done, turning frequently.

How to Prevent the Chicken from Sticking to the Grill

Spray the unheated grate of the grill, away from the fire, with cooking spray before using to prevent sticking. Or, brush the grill grate with oil.

Substitute

Substitute 1 can (20 oz.) pineapple chunks, drained, for the fresh pineapple chunks and/or a green pepper for the red bell pepper.

This is delicious! It tastes at least as good - and sometimes better - than Carribean Jerk Chicken I've had in restaurants! I will be making it again and again!

I made this recipe upscaled to use 8 pounds of chicken - there was 1 skewer left! Everyone wanted the recipe, and my family now insists I make the marinade at least once every two weeks. This is a new family favorite.

My whole family loved this recipe. Of course we like food that is on the spicy side, so this was perfect. Making the marinade is the hardest part and it is very easy to make. Less than 10 minutes on the grill and it was done. I will be making this recipe again very soon.

I will definitely make this recipe again. However, next time I will cut back on the amount of brown sugar and also use fresh pineapple instead of canned. Overall it was very good and easy to make!

This was delicious! I will definitly make it again. I am giving my friends the recipe because they loved it so much! I think I suprised my friends with my culinary skills!
