I sprinkled some more salsa and cheese on the top for the last 10 minutes. That was the best part! Though, both my husband and my toddler loved the dish! I didn't have any fresh garlic - that probably would have helped to make it not so bland.

Instead of bread crumbs, substitute with Fritos Corn Chips. I call mine "Mexicalli Meatloaf "

Fantastico! We love meatloaf, but I was running out of ideas and I wanted to make it with what I had on hand. Great recipe! There are two cooked and sliced in the freezer for lunches. Toss in the microwave and it is ready!

This meal was a huge success in my family. My husband does NOT like meat loaf, but he actually asked me to make this one again. It is now in my recipe book. SUPER TASTE

Next time I'm going to "kick it up a notch" with some hotter salsa, a few dashes of hot sauce, or some ground red pepper--still; we enjoyed it very much.

I liked this recipe! I left out the garlic and used double the salsa it called for. It came out great. Will make this again!

This is the first meatloaf I've made, that I will make again and again.... I did add an extra egg and more spices and it turned out perfect!
