I absolutely HATE meatloaf but my husband loves it, so I've been experimenting and looking for one that I can stomach. I tried this recipe, and it was a major hit. I actually LOVED it. My picky 2 year old even cleaned his plate and asked for "More please." It was extremely quick to prepare, and I love how I could just pop it in the oven and get other things done around the house. We'll definately be making this one a couple times a month.

Really moist, and great flavor.

I loved this meatloaf, and so did the kids! I added a can of refried beans to it and used crumbled crackers instead of the bread. It turned out wonderful! I will probably make this once a month.

Made this for last minute company and had raves. Next time, I will heat remaining salsa to put over the meat loaf when serving.

This was a great recipe. We also had the salsa along side of the meatloaf and that was really great. I will actually make this again. Everyone loved it and the left overs were great the next day for lunch. Also, added a bit more cheese which added more flavor.

I found this recipe a great alternative to my attempt at meatloaf, The whole Family loved it. also adding a teaspoon a cayenne pepper is a grat way to spice it up.

Nice and easy. It needed more salsa. I put 1/2 cup and I think it could've used 1 cup. Will make it again.

I made this and did add fresh onion. I also made a spicy tomato gravy to serve on top and it was delicious! The left overs made great meatloaf sandwiches the next day.

I have made this recipe twice now and really like it. I used medium salsa so it wasn't spicy at all. I think next time I make it I might add some diced onions to the mix just to give it more flavor. Other than that I think it is a great recipe and very easy to make.

My family liked this one but in our opinion you do not need that much salsa. It made it spicy and my family does not like really spicy food. But when I make it again, I will cut back on the salsa. That is the only thing I will change.
