Cheesy Salsa Meatloaf

If you like your meatloaf moist and flavorful, you'll love this recipe, which calls for garlic, cheddar cheese and thick, chunky salsa.

What You Need

lb. ground beef

1-1/2

cups KRAFT Shredded Cheddar Cheese

1/2

cup plain dry bread crumbs

1/4

cup milk

1/4

cup TACO BELL® Thick & Chunky Salsa

egg, lightly beaten

clove garlic, minced

Make It

PREHEAT oven to 400°F. Mix all ingredients until well blended.

SHAPE into loaf in 9x5-inch loaf pan.

BAKE 1 hour or until center is no longer pink. Remove from oven. Let stand 3 minutes before removing from pan. Cut into slices to serve.

Keeping it Safe

Cook meatloaf until meat thermometer inserted into center of loaf registers 160°F and meatloaf is no longer pink in center.

This is an excellent recipe! I added ketchup as the final layer on top of the meatloaf the second time and it made it better as it sealed in the juices.

This is excellent using 1 lb. Jimmy Dean Maple Sauage in place of 1 lb. hamburger. Also makes good leftover sandwiches.

It was fast and easy with an extra kick to the ordinary. Good with extra salsa on the side.

my husband and I are really trying to watch our carbs and it seems that this is a good thing for us to add to out diet menu. Instead of the salsa ,I used homemade tomato sauce. We liked it alot and I will make it again. Now if I could only find some more dishes that taste as good , I will be all set!!!
