Italian Bean and Tomato Salad recipe
I blanched the green beans and used shredded parmesan instead of grated. A mouthful of flavor!

I also used Black Eyed Peas and Chick Peas w/ the others. Crumbled Feta w/Tomato Basil makes a great topping. Everyone loved it.

My family and I thought it was great. I steamed the green beans because I didn't think I would have liked it with totally raw green beans. I also used shredded parmesan instead of grated. I am thinking about adding chopped sweet onion next time. I forgot to add garlic as another person commented and will try to remember it next time as that sounds good too!! This is an excellent pot luck dish. Easy to transport and serve.

I didn't have any fresh basil and used dry instead, it was very good but would have been better with the fresh basil. I will make this again and use the fresh. Very colorful and a great substitute for salad.

Yum! This was a winner by me. Crunchy and tasty and healthy. Did shake a lot of parmesan on, though :-) I used a white crunchy canned bean which I would name except my father already threw the can out and I can't remember...I imagine the softer white canned beans the recipe calls for would be better. I cut recipe in half for a side dish for 4 and it was mostly eaten.

I thoroughly enjoyed this recipe. I did, however, add 1 clove of minced garlic. You can also exchange the fresh green beans for broccoli and the white beans for chick beans. It is quick and easy to make, it looks great and tastes even better. I brought the leftovers to lunch the next day. Travels well and tastes delicious!!
