I blanched the green beans and used shredded parmesan instead of grated. A mouthful of flavor!

I used only one can of beans because I thought 2 cans would be too much. Delicious! Family & guests really enjoyed it. Leftovers tasted even better the next day.

Being on the South Beach diet, I have made various variations of "bean" salad's. For this one, put a little spice in it and add some Jalapenos for some extra kick to it..

Some didn't like the fresh green beans. Most liked it when I added fresh pea bods instead, or used canned green beans.

This light, yet incredibly flavorful salad was served with grilled spinach, tomato and feta rolled flank steaks. Topped off with seasoned garlic toast. Talk about a taste sensation! I can't wait to do this fantastic combo, again! The Italian Bean and Tomato Salad was the perfect side salad for this dinner.
