I think next time I wouldn't heat the carrots in the dressing. I would heat the carrots first, then add the dressing and substitute cilantro instead of parsley.

My comment is also about the carrots not being done. They were one step above raw after 10 minutes, and the Catalina was almost ready to stick in the pan. (By the way...I used FREE Catalina and it worked fine). I now know that I will need to pre-cook them somehow.

This had a great, very different taste. The almonds were very special and gave a welcome crunch. Since these baby carrots are different thickness, it was not done after 10 min, and some carrots were barely cooked, so the dish needed to be MW for 4 more mins.

My husbands grandmother has made this recipe several times and everyone always wolfs it up! There are usually about 20 people at our family dinners and she has made enough for 30 and we were still asking for more. YUMMM!!!

I made these for both Easter and Thanksgiving of 2004. 1st time the Carrots weren't "done" per the recipes instructions. 2nd time Microwaved them before starting recipe and turned out much better. I thought they were very good!!

Very tasty, my son liked it as well and it's hard to get him to eat carrots. Thank you for the recipe.

I haven't made this one yet, but I have made glazed carrots with maple syrup-yummy. I will either steam the carrots or even microwave them first to partially cook them. Very easy!

I love this recipe and use it all of the time. Its a great way to eat carrots and adds wonderful flavor. I didn't use the almonds, but it still tasted great.

A helpful hint: Steam the carrots before sauteing with the dressing....that makes it less crunchy!

Couldn't you make this recipe with low-fat or fat free Catalina?
