What You Need

lb. red potatoes (about 2), peeled, thinly sliced

carrots, thinly sliced

1/2

cup water

1/3

cup plus 1 Tbsp. KRAFT Grated Parmesan Cheese, divided

1/3

cup MIRACLE WHIP Dressing

Tbsp. chopped fresh parsley

Make It

HEAT grill to medium heat.

MICROWAVE vegetables and water in microwaveable bowl covered with waxed paper on HIGH 5 to 7 min. or until potatoes are crisp-tender; drain well. Mix 1/3 cup cheese and dressing. Add to vegetables; mix lightly.

SPOON onto center of large sheet of heavy-duty foil sprayed with cooking spray; fold top and ends to make packet, leaving room for heat circulation inside. Place on upper shelf of grill.

GRILL 15 to 20 min. or until vegetables are tender. Cut slits in foil to release steam. Open packet carefully. Sprinkle potato mixture with parsley and remaining cheese.

Note

If you don't have heavy-duty foil, you can use a double layer of regular foil instead.

I've made this twice. The first time I substituted sweet potato for the carrots. The second I added garlic powder. Both were excellent but I think I preferred it with the sweet potatoes.

I left out the carrots and added rosemary and some garlic powder along with the salt and pepper. Was delicious! Great made with skin-on red potatoes!

I made this without the carrots, taste was bland, but I added some salt & pepper and a little dill and with it lots of flavor. I'll be making this one again, especially since my picky husband ate almost all of it!

added salt pepper ....refrained from adding butter. was good but not up to 4 star good! made this with sensational foil-pack vegetables, and grilled bruschetta chicken. all three recipes were in latest kraft magazine.

my 1 yr old son loves these, he would have eaten the whole batch if i had let him! i added more topping, and would like it better with mayo instead of miracle whip- it was a little too sweet- garlic powder was tasty added to it, i will definitely make again!!
