This turned out pretty good. I didn't use the tostada, just made it into a salad instead. I'll make it again!

My hubby was recently diagnosed with gout, so we've had to go meatless. The black bean and rice tostada is an incredible addition to our favorite meal collection. The toasted tortilla makes the meal. Also, I used frozen corn instead of canned. It gives the recipe a sweeter, fresher taste. Very good.

I added water to the rice mixture because it was really dry. I also used brown rice instead of white. It's really good topped with sour cream and salsa.

I used frozen corn instead of the canned and I added a little water to the rice and bean mixture to make it moister. This is definitely a make-again recipe. Even my daughter who doesn't like beans ate this without complaining!

The toasted tortillas came out great - it was tricky keeping extras warm, though. Great way to use up leftover rice, beans, etc.

these were so simple and so quick to make, my family loved them.....they can't wait till i make them again. also we added some sour cream and guacamole they were gooood!

I really liked this recipe the next day we had in soft taco shells and it was yummy then too.

Instead of the taco kit we just added taco sauce, cilantro, onion, and green chilis to the rice. This was a hit at our house!

It is not the taste that bothered me it tasted fine, but it just seemed like a hassle i would just rather throw chips in it. Unless you are looking to be more healthy then i guess you would want ot do this instead of using not good for you doritos
