I've made this a few times and each time I get MANY compliments!! Very good with veggie's or crackers. My fav are the Sundried Tomato & Basil Wheat Thins. Very easy to make.

Made it 3 times, people asked for the recipe each time! Light and refreshing, but delicious! Can be made with fat free or light cream cheese, too. If you really, really drain the cucumber (almost dry), it's like a spread. If you leave it a little moist it's more of a dip. I prefer the dip. Fabulous!

Made for several parties I've been to over the summer...hardest part about recipe is draining the cucumber, but I wrapped in paper towel and that helped. Also, added a little more garlic. Big, big hit with family & friends.

This was outstanding and a big hit at our Father's Day party. I made it exactly as written (I let the cucumber drain for about 10 minutes), though it did chill longer than 2 hours. I served with pita chips, pretzels and cut veggies. I gave out about 3 copies of the recipe!! Definitely a keeper.

Very good, but definitely needs more of something, I see some others upped the garlic, good idea.
