I also made this for a party and both trays disappeared! I wasn't sure before cooking if the turkey cup would hold...but it certainly did. I like spicer turkey so I used the cracked-pepper turkey but I would also use the Cajun Turkey.

I made this yesterday for potluck Christmas Party. Everybody loves it, I brought the recipe with me. We made copies for everyone and they said the will make it for their Christmas party. It is easy to make and also low carb. Thanks.

Everyone enjoyed this recipe so much. I did find it was easier to put my spinach mixture onto my slice of turkey and then put it in the mini muffin pan.

Made this for work, it was very good. and warms up well also in the microwave. The thin turkey somewhat tears when handling but that is no problem with patience. I used regular cream cheese spread instead of the light. Very tasty and simple. They guys at work insisted on eating them crackers and tortilla chips!!

Very easy to make. I also made a batch with ham so there would be variety. My guests loved them! It was also nice for the recipe to turn out just like the picture.
