i made this recipe for a "tea" that my daughter in law was giving. it was an incredible success, and everyone that attended asked that i share the recipe. it was so easy to make, and a wonderfull addition to a get together that provided a healthy, lower in fat option to the menu. my adult children liked them so much, they asked that i make them a new addition to our traditional christmas menu!

Easy to make and lovely to serve. Guests were impressed. Some even topped it off with a dab of honey dijon mustard.

used ham and substituted romano for mozzarella and instead of spinach, substituted minced parsley. topped with a few bacon bits and red pepper flakes!

Very, very good. Unusual and extremely well received by my guests. HOWEVER, I highly recommend cooking the turkey in the mini muffin pan for a few minutes first to crisp it up and then filling it...then finish baking

I made this twice so far. It was a big hit both times. My family recomemned I use 2 slices of meat, so the second time I did. 2 slices was the winner. Yummy either way, and EASY.

Brought it to Thanksgiving dinner with friends. It was the first thing gone! Easy to make, my 2 and 1/2 year old helped. slippery when you put in muffin pan, but well worth it!
