This is a great family dinner. I made a few changes though:
-used 2 cups cooked penne (whole wheat)
-used 3 zucchini
-used 2 14-1/2 oz cans of tomatoes, with juice
-and I tossed the cooked penne in a butter sauce.
I used 6 TBPS unsalted butter, 3 cloves of minced garlic, and 1/3 cup grated Parmesean cheese for the sauce. I thought this sauce on the pasta added a little something to the dish.
Great dinner, easy to make, tastes really good :)
