I used sage instead of the rosemary and it made the pork chops taste like stuffing-delicious! Be sure to stir the potatoes half-way through the bake time in the oven or they will stick to the foil and burn.

This sounded tasty so we tried it with chicken breasts vs. chops and it turned out very nice. I wasn't blown away, but I'm not a huge fan of mustard - my hubby is though and he loved it! I'll try it again with chops, the mustard will probably taste a lot better on pork.

The pork chops were good, especially considering how many calories for the chop & potato. Using the foil is a great tip with this recipe. It really does make clean up a breeze

This was a winner! We loved it! It was a great new way to fix pork chops. I did have to cook the potatoes a little longer in the microwave.

I made this for my husband who hates mustard and he loved them. I used honey mustard dressing instead of the dijon mustard though.
