How do I double the recipe so it will make a serving of 12? It is for a work potluck.
Overall, this recipe was definetly better than regular EasyMac, but the eggs kinda through me off. It was like scrambled eggs in my mac and cheese, really weird. Maybe I prepared it wrong, but next time I'll definetly take out the eggs and add more velveta, because it was pretty dry.
I love baked mac and cheese, and this is an easy recipe to make that tastes great. I substituted whole wheat elbows and low fat cheeses, then added cut up chicken and peas to make a one-pot dinner, and we loved it. Its an easy dinner and even my kids cleaned thier plates!

It wasn't terrible but wasn't great, either. I could taste the egg, which isn't really desirable to me in mac and cheese.
It was delicious and creamy, but if you don't eat it right away it gets dry and cakey. The leftovers weren't very good either, and this makes a ton!
I'd add more cheese & some salt for taste...other wise very yummy
All I can say is....AWESOME!!!! Everyone in my family enjoyed it. This will definately be a repeat in our family's menu.....very cheesy and not dry at all. I plan to cut back on the red pepper though. The kids found it to be too peppered.
While I thought this dish was okay, my husband hated it! Since we don't really care for red pepper, I merely put a dash in and it was still too much for us. My husband also didn't like the Velveeta cheese, which is probably more geared for children's taste, since I remember liking it as a child. All in all, although I liked the creaminess the Velveeta and evaporated milk gave it - we didn't like the overall taste of this dish.
My children range in age from 14 years to 8 years old, and they all loved it. It was easy for them to help me make it, and I have no doubt it will be a menu staple for a long time to come!
