Forgot to buy the Velvetta, otherwise I really liked it. My kids wouldn't touch it though. I'll try again with the cheese. Or save to make for a potluck. Also added corn.

I added a can of corn with the ro-tel and used black beans. It was delicious and it made a ton. But that may be because I added some cooked chicken as well. I will definitely make this again!

Yummy! BF says this tastes like the red beans and rice he remembers from years ago. Liked it with a dollop of sour cream and a sprinking of shredded cheese.

Very easy, very yummy. Even better the next day as leftovers. I made this for dinner one night and my husband loved it so much he asked me to make it for his work potluck. It was a hit!

The recipe was very good, but to spicy. We love spicy, but this was to much. Next time I make it, i'll use plain tomatoes.

Very quick and easy to make. For some reason mine came out very spicy - a little too spicy for little ones. But it was very good!

Made this with a few substitutions: black beans for kidney beans, one can of chopped green chilies and one can of chopped tomatoes for the rotel and since I didn't have instant rice on hand, I cooked white rice separately and stirred in at the end. It was a fantastic hearty meal that my husband loved. I could go either way with the cheese, was good with it, but also would be good without! I will def make this one again!
