this is one of the best recipes i've found for red beans and rice! even my picky little toddler eats it. it's definitely an easy dish to make, and i love the cheese mixed in! another great way to go is to use chile con queso instead of velveeta! it's just about the same as the velveeta, but it gives it a little more spice. yum!

This is WONDERFUL! I didn't add the cheese b/c my hubby doesn't eat cheese, but even without the cheese it was fantastic! So easy!

easy to make and good. I also precooked the rice and I used brown as well as white rice. I also substituted cheddar cheese instead of the Velveeta because I am not a fan of Velveeta cheese. Will definitely make again

it was so great....and easy to make....and it only cooks for about 7 min. which is wonderful...me and my husband loved it!!!

I have learned with many meals not to mix in uncooked rice, but to just pre-cook it and then mix it in. That it was I did with this recipe. It was so incredable! Everyone just loved it! I just omitted the water and rice from the pot and stired in the cooked rice before simmering. Also, I did not drain the kidney beans either. This is a keeper!

I will make this recipe very soon because it contains all my favorite ingredients. The rating from 3/21/05 really encouraged me as I searched for a reason of draining and rinsing the kidney beans. I use kidney beans often and have never heard of draining and rinsing them. Thank you for the important info from ju099371.

I like this recipe. I would make it again but precook the rice and add the cheese after that. I had to use 4cups of water to get the rice right and with the cheese added at the same time it made the rice harder to get done. Also I didn't rinse the beans to keep some of the flavor to mix in with the rice.

Very good and hearty dish. Had a slight kick to it, not not really that bad. Kids liked it as well. Would definately fix again.

This is very easy to make and it's very good and very hearty and a little bit spicy. Not sure if that comes from the chiles or from the chili powder. Instead of 1/2 of the 14 oz pkg of sausage I used the entire package. Overall this is very good. I'd definitely make it again.

I used this recipe for a cooking activity at school. The staff and students loved it. It was quick, easy and kid friendly. Double the recipe, so that there will be seconds.
