With a few changes this recipe is SO good! One of my boys absolutely hates red peppers and spinach and (even though he picked out the peppers) he had two full servings and commented on how good it was! However, made as directed it can be a little bland, so I recommend spicing it up... I made this recipe using chicken broth instead of water as others suggested. I also added an extra clove of garlic, 1/2 t. of paprika, and 1 t. of onion powder. This will definitely be a regular meal in our home from now on!
