This recipe is a great alternative to guacamole or salsa. Instead of using red bell pepper, I used diced avacado, (which stayed green because of the lime juice marinade!)

needs more substance in order to dip with chips. i combined one jar hot southwestern salsa and one pkg cream cheese and mixed all the other ingredients into it. wonderful

quick and easy, but for extra special touch add a can of drained marinated mandarin oranges and a few dashes of hot sauce to taste

The shrimp ceviche was delicious. It is easy make and I added 2 ingredients to the recipe which were two cans of V8 tomato juice and 1-2 diced cucumbers. A few hours after the shrimp was marinated with the lemon (or) limes, I had added the tomato juice and the diced cucumber(s). My family enjoyed it. This is a great recipe to enjoy for an appetite. I will be making this again soon.

This recipe was very good. I made it for a family function & it was a big hit. My aunt wanted me to make it for her son's engagement party. A good cool summer dish.

I was surprised as to how well the dressing and celery went with the ceviche. I have eaten the traditional ceviche before which do not call for these ingredients. I cut the shrimp into thirds and replaced the red pepper with a roma tomato, added shallots, salt and pepper to taste. I also used tostadas instead of tortilla chips.
