I have turned so many people on to this!! I have been makin this for 3 years now. I use Bacardi Limon (I dont care for it with regular rum) and I do not use mint at all and everyone loves it! Its a great low calorie drink so it is great when you are dieting!!! I also enjoy it poolside and on the boat!!

This drink is awesome and very popular with the Pampered Chef Parties I do for customers. To make a 2qt pitcher, I use 4 cups of water and 1 cup of Rum. Then add LOTS of fresh mint and stir around. I also squeeze 2 fresh limes for the juice and slice the 3rd one and drop it in. Before serving, add 1 liter of club soda!!!!

Made it for a big family getogether and it was a huge hit! Everyone wanted the recipe! Will be making every weekend this summer! I used a few drops of peppermint extract instead of fresh mint leaves and it turned out fine--just be careful not to add too much!
