Fresh berries in and on whipped, chilled cream cheese would have been enough. But no. We're upping the ante with a chocolate chip cookie crust. Pure heaven.

I took this to work and wished I had made another one. The compliments were great. I just made it again last night for Father's Day. Very light and refreshing.

Noticed a lot of comments regarding how fast this 'melts' I have a recipe similar to this one which holds up well. I would suggest eliminating the sugar, adding a can of sweetened condensed milk, and using only 3/4 cup of juice. Reducing the juice and eliminating the sugar will reduce the amount of liquid in the recipe which will then allow it to hold up longer. You could also try this recipe with lemonade concentrate, fold in either blueberries or raspberries as an alternative.

This is an excellent alternative for a great dessert. Low fat and low sodium are a refreshing option to have in today's high fat, high sodium world.

If you don't have Chips A-hoy you can also use graham cracker crust. Always enjoy this recipe!

What a wonderful summertime delight. So easy, no heating up the kitchen. Will be fixing it again this week-end for a family birthday party.
