Fresh berries in and on whipped, chilled cream cheese would have been enough. But no. We're upping the ante with a chocolate chip cookie crust. Pure heaven.

My husband does not care for desserts, surprizingly he liked this, a lot. He even suggested that I take that to our friends, their dinner party. He normally suggest "meat".

I used chocolate graham wafer crumbs instead of chocolte chip cookies- very tasty

Instead of using whole chocolate chip cookies for the bottom crust the second time I made this recipe I put the cookies in a food processor and made chocolate chip crumbs when pressed in the bottom of the pan it kept the stawberry mixture from leaking from the spring-form pan.

When I made this to take to a potluck at work I made individual ones in cupcake cups. It was a big hit!! It is also good with a little chocolate syrup drizzled over the top! yum

This recipe was fun to make. I used a manual chopping machine to cut up the strawberries for inside the cake; I didn't want to use a food processor because I thought it would have made them so mushy. The cake came out exactly as pictures. Everyone at my barbecue enjoyed it and asked for the recipe.

This was so easy. Cool and refreshing. I took it to work and it was a BIG hit with the girls. They all wanted the recipe. I will be making it again.
