I did do a couple of tweaks to this recipe. I am not a big tomato fan so I left the canned tomatos out and also left out the mushrooms. I added a half pound of ground beef as well as a whole onion. I layered the zucchini onions then tomato and beef sauce then some shredded cheese and repeat. It turned out really well. The next time I will try to roast the zucchini first so that some of the fluid is out of them so it doesn't thin out so much. All in all it was a hit!
I made this for a side dish but could have made it for the main course. It was amazing. My kids who hate zucchini and don't care for veggies absolutely loved it!!!
Very nice change from the usual. I added sweet Italian sausage to mine to make it a meal. Found it to be a little bland but will find a way to spice it up and make again.
Very good! Great quick and easy side dish. Or perfect for a meal with a little chicken or Italian sausage added to it.
So easy and delicious!! I added black olives and red bell pepper to the recipe and it turned out great.

It was a great recipe as our garden was filled with zucchini and we'd had the same recipes for the last weeks was new and delicious!
I made this last night... only I sauteed the veggies with garlic and added smoked sausage before I baked it. Made some garlic toast to go with it... OMG!! SOOO good! Shared it with my neighbors and they loved it as well! Will most DEF make this again!
I modified this recipe by adding spaghetti on the bottom, a can of diced tomatoes, fresh onion, garlic, basil and oregano and baked! My family loved it!
It was very good taste wise and very easy to prepare. Ate as an entree with a side of garlic bread. Definitely making again.
