I live in the caribbean and Zucchinis are very expensive, so I used eggplant instead and matuure cheddar cheese for the parmesan.

It's quite good....when it's warm but I would advise re-heating it.

I had this lastnight my husband and my daughter and i love it.This one i will make again.But in oven for 35 mins its cooks longer for zucchini

I found this recipe to be very good. I did make a few additions such as, diced tomatoes, chicken, and summer squash, and it was really good.

I will not try this recipe again. It was soggy, too much mushrooms, etc.
