What You Need

pkg. (2-layer size) yellow cake mix

pkg. (3.4 oz.) JELL-O Lemon Flavor Instant Pudding

cups BREAKSTONE'S or KNUDSEN Sour Cream, divided

cup water

1/4

cup oil

eggs

Tbsp. orange zest

1/4

cup powdered sugar

tub (8 oz.) COOL WHIP Whipped Topping, thawed

can (11 oz.) mandarin oranges, drained

Make It

HEAT oven to 350°F.

BEAT cake mix, dry pudding mix, 1 cup sour cream, water, oil, eggs and orange zest with mixer until blended. Pour into 2 greased and floured 9-inch round pans.

BAKE 25 to 30 min. or until toothpick inserted in centers comes out clean. Cool cakes in pans 10 min. Invert onto wire racks; gently remove pans. Cool cakes completely.

WHISK remaining sour cream and sugar in large bowl until blended. Stir in COOL WHIP.

STACK cake layers on plate, filling with half each of the COOL WHIP mixture and oranges. Frost top with remaining COOL WHIP mixture. Garnish with remaining oranges. Keep refrigerated.

Prepare using COOL WHIP LITE Whipped Topping, and BREAKSTONE'S Reduced Fat or KNUDSEN Light Sour Cream.

Chocolate Cream Cake

Prepare as directed, using a chocolate cake mix and 1 pkg. (3.9 oz.) JELL-O Chocolate Instant Pudding, and substituting 1 cup fresh berries, such as raspberries, sliced strawberries or blueberries, for the oranges.

Make Ahead

The COOL WHIP filling can be prepared in advance. Store in tightly covered container in refrigerator up to 2 days before using as directed.

I made a lemon blueberry variation for Easter and everyone raved. Even though this dessert is sinfully rich, my family kept commmenting on how light it was. I can' t wait try this with strawberries!

It's so wonderful! I prepared this cake for a Sunday family get together. Not only did everyone comment on how pretty it was, but they gobbled it up too. My husband was dissappointed because there were no leftovers to take home! I DID use two cans of the oranges as suggested by another member. I'm planning on trying this recipe again, but substituting with white cake mix, cheesecake pudding, stawberry flavored Cool Whip and fresh strawberries for an upcoming housewarming.

Beautiful cake, inside and out ! Made this one for friends last week, forgot to add the water, but they loved it :) Then this evening, I made the cake again for Easter Sunday gathering. I ALSO used 2 cans of mandarins, well drained. This time, I used the whole tub of Cool Whip = 1 litre. This one is a keeper :)

Huge Success! Made it for my sister's birthday and everyone loved it! Suggest you use 2 cans of mandarin oranges drained. Pat dry and hand-dipped 20 in white chocolate for the top layer, alternating 1/2 dipped and 1/2 not on top layer only. One can plain mandarins for 2nd layer. Also used french vanilla cake mix instead of just white or yellow cake. Exellent combination.

My mom made this for my graduation dinner & it was WONDERFUL! I couldn't wait to come over again for the leftovers! It was very moist & sweet with citrus. She used more madarin oranges than it called for and it was delicious!
