We opted for the oven version being a rainy night and all. What a hit at our dinner party! The pineapple salsa was a great subtle sweetness to the moist pork loin.

I did things a little differently - I marinated the pork roast in the lime juice for several hours then put it on the grill. After an hour I sprinkled the herbs/spices on the pork as it cooked putting more on it every 20 minutes when I turned it. Our kids were fighting me at the grill trying to get some of it. fell apart tender. Served with the Great American Potato Salad recipe (found on this site).

This is a very simple and good recipe. I used my own rub for the meat. It turned out very tender and juicy. Enjoy~

Even though it took extra hour to cook to 160 degrees, everyone loved this roast.

I used the rotisserie on the grill to cook a 3 lb tenderloin with this recipe. It was really great.

Looking for something easy to make for 13 guests when my sister (see comments 7grankids) suggested I make this. It was a great summer meal (other than the norm on the barbecue) and the salsa aside from being excellent was so colorful. What a way to enjoy your guests while your tasty meal cooks by itself.
