My husband and I are very picky eaters, and I don't cook, so rarely do we eat at home...all this to say, I was searching for something healthy and easy to make one weekend, and stumbled upon this recipe. We make this meal once a week if not more-it is enough for 2 days! Delicious, healthy, easy, and a HUGE HIT at dinner parties, served chilled. A must try!!!
