Bruschetta Chicken Bake

Comfort casserole, meet bruschetta. The perfectly balanced bite of tomatoes, garlic, chicken and mozzarella is the inspiration for this hearty dish.

What You Need

can (14-1/2 oz.) diced tomatoes, undrained

pkg. (6 oz.) STOVE TOP Stuffing Mix for Chicken

1/2

cup water

cloves garlic, minced

1-1/2

lb. boneless skinless chicken breasts, cut into bite-size pieces

tsp. dried basil leaves

cup KRAFT 2% Milk Shredded Mozzarella Cheese

Make It

HEAT oven to 400ºF.

step 1

MIX tomatoes, stuffing mix, water and garlic just until stuffing mix is moistened.

step 2

PLACE chicken in 3-qt. casserole sprayed with cooking spray; sprinkle with basil and cheese.

step 3

TOP with stuffing. Bake 30 min. or until chicken is done.

Substitute

Prepare using STOVE TOP Lower Sodium Stuffing Mix for Chicken.

Make Ahead

Prepare and bake recipe as directed; cool. Refrigerate up to 24 hours. To reheat, spoon each serving onto microwaveable plate. Microwave on HIGH 2 to 3 min. or until heated through.

Serving Suggestion

Serve with steamed Italian-style vegetables.

My husband likes to only try new things on the weekends so I told him about this one. As it was baking he said it smelled really good. After about half way done, he said make this again!!! It is really good with the tomatos.

Very easy and fast to prepare-made this yesterday. As they helped themselves to a 2nd serving, my husband and teenage daughter proclaimed it a keeper.

I saw this recipe in the Food and Family magazine and thought that I would try it. Well, I made it last night for dinner and it worked out very good. I actually had to double the recipe because I cook for a large family every night. The recipe is easy to follow and everyone enjoyed it, even my 2 and 10 year old.

Wonderful recipe!! Very simpe to make and it had lots of flavor. I used tomatos w/basil and garlic I also added a little extra cheese and extra garlic. Next time I make it, I think I wouldn't mix the tomatos and stuffing as much so it comes out a little more crunchy.

I have some elderly friends that I needed to take a meal to. This was simple and made enough for them to have left-overs. The chicken was very tender and the basil and stuffing mix really gave it a great flavor. Thank you for this. I will definately make this again.
