Bruschetta Chicken Bake

Comfort casserole, meet bruschetta. The perfectly balanced bite of tomatoes, garlic, chicken and mozzarella is the inspiration for this hearty dish.

What You Need

can (14-1/2 oz.) diced tomatoes, undrained

pkg. (6 oz.) STOVE TOP Stuffing Mix for Chicken

1/2

cup water

cloves garlic, minced

1-1/2

lb. boneless skinless chicken breasts, cut into bite-size pieces

tsp. dried basil leaves

cup KRAFT 2% Milk Shredded Mozzarella Cheese

Make It

HEAT oven to 400ºF.

step 1

MIX tomatoes, stuffing mix, water and garlic just until stuffing mix is moistened.

step 2

PLACE chicken in 3-qt. casserole sprayed with cooking spray; sprinkle with basil and cheese.

step 3

TOP with stuffing. Bake 30 min. or until chicken is done.

Substitute

Prepare using STOVE TOP Lower Sodium Stuffing Mix for Chicken.

Make Ahead

Prepare and bake recipe as directed; cool. Refrigerate up to 24 hours. To reheat, spoon each serving onto microwaveable plate. Microwave on HIGH 2 to 3 min. or until heated through.

Serving Suggestion

Serve with steamed Italian-style vegetables.

I loved this! I admit that I'm cooking challenged, but I can bake like no tomorrow (read: I make desserts, but I burn real food). This is so easy and it's something that I can do with no problem: bake! I highly reccomend this to anyone who wants something simple and tasty!

My family really enjoyed this - they especially liked the basil with the mozzarella cheese. Very easy dinner. The kids helped make it too!

This dish is wonderful AND everything you need is in one pan! I used 2 pounds of chicken (recipe calls for 1-1/2), cut into smaller pieces, used the garlic flavored "petite" diced tomatoes, and cooked it 10 mintues longer (to ensure the chicken was fully cooked) and it was GREAT!!! Have made it over and over!!

VERY easy! My son said it tasted like chicken parmesan.
