Great Dish! Sometimes I make as is and can make Sunday for dinner one day during the week. And if I'm making to eat immediately, I add a layer of already steamed broccoli to it. Fantastic!
I have made this several times but now use a larger pan and more stuffing and tomatoes. A temperature of 400 seems way too high, as the chicken cooks quickly because it's cut up into bite size pieces. I've also used Italian seasoned tomatoes which eliminates the need to use additional seasonings, though I do find a bit of salt on the chicken makes it more flavorful. There are rarely leftovers.
Made this tonight & will make again. Hubby does not like tomatoes but went back for seconds. Made as stated but used a can of fire roasted diced tomatoes and did not have mozzarella so used a cup of cheddar/provolone mix. Usually I change all recipes to meet my tastes, but honestly did not alter this one and it was a huge success. Will keep in my rotation for sure... tasty & economical!
I haven't made this in a while so I had to look it up. I used to bake it in a 13x9 pan but tried a deeper round casserole dish this time - following the picture at the top. I think I like it in the flatter pan better because I love the crunchy bread on top and the flat pan has more surface area than the round casserole dish.
I cook extra meals for a variety of friends and everyone always asks for the recipe when I make this. I have also used cooked ground chicken.
This is a staple in my house. It is a fast and easy meal that everyone comes back for more.
Have made this several times. I always brown the bite size chicken pieces before putting the ingredients together. Gives it some color and also helps to be sure the chicken is cooked completely. I add additional garlic, basil & cheese. This avoids the dish from tasting bland.
I use jarred pesto instead of basil leaves, but this dish is a huge hit with my family.
I made this last night and it was very good!!! I used gluten-free bread and made my own stuffing mix. My husband and I found it very tasty.
