I have made better meatloaves, but I have to rate this 4 stars for its simplicity. I used the cornbread stuffing, salsa, and green pepper combo. When it was done it was moist, but did not hold together when slicing. The taste was just good. I have one loaf leftover, and when I reheat it, I will add more salsa and a slice or two of Provolone cheese on top. Next time I would add some chopped onions and mushrooms (in addition to the green pepper), to the raw mixture, and, when it is almost done, add Provolone cheese on the tops to melt.
