Loved the recipe but changed up a few things. I grilled and shredded 2-3 chicken breasts. I added 1 can drained black beans. Instead of frozen, I used 1 can drained shoepeg corn. Also added 1 tbsp. cumin, 1 tsp garlic powder and to make it a little spicy, 1/2 to 1 tbsp cayenne pepper. Topped with sour cream.
