Chicken Tortilla Soup

Chicken Tortilla Soup recipe

A Southwestern cousin of mom’s chicken soup, this one has a little more kick with a crispy topping. And, like its best-loved relative, it’ll make you feel good all over.

This was fabulous! We made this for 2 of us and had some left over, but for a large family I would double the recipe. Also, I added a couple more tortillas to the oven for topping.

definately use corn tortillas. I used flour tortillas the first time and they got pretty mushy.

This recipe was very easy to make and tasted great. You can use mild or hot salsa to make it more or less spicy. My family loved the crunchy tortillas on top and they can't wait for me to make it again.

This was the most awesome soup I have ever made! It is well worth the time and effort. It has a wonderful flavor and would be an excellent soup for cold winter days to warm you up. I definitely will make this soup again!

YUM!! My husband and I just loved it! And, my mom said she loves it more than at her fave mexican restaraunt. I added double the corn for crunch, and more chicken to make it heartier. I'll definitely make it again. Made a double recipe the first time, making even more next time :)
