Chicken Tortilla Soup

A Southwestern cousin of mom’s chicken soup, this one has a little more kick with a crispy topping. And, like its best-loved relative, it’ll make you feel good all over.

What You Need

corn tortillas (6 inch), divided

1-1/2

tsp. oil, divided

1/2

lb. boneless skinless chicken breasts, cut into bite-size pieces

cans (14-1/2 oz. each) chicken broth

cup TACO BELL® HOME ORIGINALS® Thick 'N Chunky Medium Salsa

cup frozen corn

cup KRAFT Shredded Cheddar Cheese

Make It

HEAT oven to 400°F.

CUT 2 tortillas into strips; toss with 1/2 tsp. oil. Spread in single layer on baking sheet. Bake 10 to 12 min. or until crisp, stirring occasionally.

MEANWHILE, finely chop remaining tortillas. Heat remaining oil in large saucepan on medium-high heat. Add chicken; cook and stir 5 min. Add chopped tortillas, broth, salsa and corn. Bring to boil; simmer on medium-low heat 15 min.

SERVE topped with cheese and tortilla strips.

Serve with a small roll and mixed green salad tossed with your favorite KRAFT Dressing.

This is the number one rated tortilla soup in my book!! So yummy , fast and easy to make! My hubby loves the heck outta this soup:)

Wow!!!! so good and so easy. I already had shredded chicken so I just put everything in my crockpot, plus some onions and cooked for about 3 hours. Awesome!!!

I used kraft's recipe as a base and then added about 1 cup of sour cream and about 1/2C total of red, yellow and green bell pepper sliced thin (found in the freezer section of grocery store) and 1/2C onion sliced thin (was in the pepper mix in the freezer section...is called fajita or stir fry pepper mix). I thickened it a touch with flour and it is DIVINE! The tortilla strips add the perfect crunch to the soup. I will continue to make this! YuMMY!

I've made this soup several times -- even when entertaining -- and always get rave reviews plus requests for the recipe! The addition of a dollop of sour cream adds a creamy richness. We love it!

I really enjoyed this soup and so did my boys! I added a can of black beans...very good. I definitely will keep this one in my recipe box!
