Easy Santa Fe-Style Stuffed Peppers

Easy Santa Fe-Style Stuffed Peppers recipe
The stuffing was soooo tasty! I browned the meat with chopped onion and a bit of taco seasoning. I also used a Mexican cheesy rice. It made a lot, so I'm freezing the more

YUM!! I left out the salsa, but it was still very delicious...and so easy!!!
although i did'nt think that it was all that time saving the kids had fun helping and they loved the recipy. and that is saying something for the 4 pickiest children on the planet. the only thing I would do different is to also add some cheese to the filling of the peppers. i will most definately make this again!
I made this recipe tonight and was running short on time. My husband and I both loved it. We had plenty for two plus left-overs for lunch tomorrow. I WILL make again soon and won't change a thing!!!
Makes much more than enough filling- I stuffed 6 whole peppers, with enough filling left to line the bottom of the pan!
Very tasty! I wouldn't suggest making stuffed peppers for leftovers, but instead save the stuffing and bake at a later time so they are fresh
I make this recipe when I need to clean out my fridge. I add anything - salsa, marinara sauce, garlic, onion, lots of corn and any kind of meat. I've used turkey, beef and chicken. And, I always add a little extra spice with cumin, oregeno and anything else that sounds good. WIth a dollap of sour cream on top, it's the best. And, easy leftovers to bring to work!
It was good but kinda dry and bland in the middle, next time I might add some more salsa, and maybe some taco seasoning to the meat. Or maybe some rotel instead of salsa, for the liquid in it.
Average. Seemed to be missing that "zing". But, I would try again and add some of my own ideas to it.
We uised ground turkey instead... I would not just do salsa but perhaps stewed tomotoes and salsa. It would be a bit more chunkier! It was good...
I've made this several tines using medium salsa for my friends who do not like spicy foods, but also using hot salsa (what I recommend). I also use about 1/2 cup of marina sauce and the whole jar of salsa. The peppers get too dry without a lot of sauce/ salsa. Great recipe and will certainly use it many times again!
