This was pretty good. I added fresh baby spinach as I sauteed the bacon for a some green, and I am glad that I did. 5 minutes was not enough time to crisp the bacon, but it all worked out in the end. My only complaint was that the cream cheese flavor bordered on overpowering - might be best to combine it with another cheese. Overall, was good and pretty easy, a great way to use up leftover uncooked bacon, and hubby liked it so I am sure I will make it again. I used grape tomatoes, but I might try unsalted, canned diced tomatoes next time.
