My dad's favorite cake is coconut. I made this cake for his birthday using the suggested white chocolate pudding and the user suggestion of substituting the water and milk in this recipe with coconut milk. I also poked small holes in the cake when it was hot out of the oven and brushed the cakes with more coconut milk and he said it was one of the best coconut cakes he has ever eaten in his life.

Made the frosting with the white choc pudding, it was awesome. Made cupcakes instead of the cake and they were a big hit!

This cake is delicious! If you have a coconut lover in the house, they will love it. I followed the suggestion of some members to not over work the frosting, and to leave it in the fridge longer than the 15 mins. suggested. It came out perfect, and I had no trouble getting the coconut to stick to the frosting. I will definitely make this again!

Another tip... we're a healthy home and I changed the pudding to sugar free CHEESECAKE pudding and used Cool Whip Free. I did use the coconut milk in the mix too and it made it really moist. It was amazing!
