I made this cake for Easter and it was super easy and sooooo delicious. I will definitely make it again even if there's no special occasion. Thanks lots for a great recipe.

Very moist and the frosting is just right. Have made this several times and the recipe is always requested. My father-in-laws favorite. Easy to bring to work for dinners.

This was a big hit at Easter dinner, enjoyed by everyone. Comments included "looks magazine perfect, and tastes as good!" Next time I will experiment with tweaking the pudding/Cool Whip portion of the recipe. I used sugar-free pudding mix this time and that may have contributed to the fact that the "frosting" was a little loose...my cake collapsed after slicing about half of it. I will use regular pudding next time, and maybe add a little cream cheese or even store bought frosting to the mix. And I will add just a little more coconut to the cake batter also. But this was a great addition to the dessert table at our Easter dinner.

I make this cake every year for Easter. It's so good that the coconut lovers fight for it. Last year I made the recipe & frosting as directed, but cut the 9 in. rounds as directed in the "Bunny Cut-Up Cake" (a Kraft recipe). This year I made cupcakes. Both were winners. I will continue to make this cake again and again.

I've made this recipe several times using a white cake mix. I took it to work twice and everyone wanted the recipe. I've even been asked when I'm going to make it again. White cake with coconut is my Mom's favorite cake, so after testing it out on the people at work, I took it to Easter dinner. My Mom was blown away. The second time I made it, I forgot to put the coconut in the batter when I was mixing it up, but sprinkled a little on the top of the batter before putting them in the oven. The coconut was a nice toasted brown when the cakes were done. Delicious!!! This is one cake I'll make again and again!!

Another way to make this recipe more yummy is to bake it in a 9x15 pan. After it comes out of the oven, poke holes all over it with a cake tester. While still hot pour most of a can of CocoLopez over the cake slowly. That is coconut syrup used in pina coladas, not coconut milk. When cool, frost with the 1C coconut mixed with the 8 oz. CoolWhip. mixture.
