Festive Cranberry-Pineapple Salad recipe

This salad/dessert ( I use it as a salad)has been a huge hit at holiday dinners for several years now. Grandson begs me to make this as he loves it.

What You Need

can (20 oz.) DOLE Crushed Pineapple, undrained

pkg. (3 oz. each) or 1 pkg. (6 oz.) JELL-O Raspberry Flavor Gelatin

can (16 oz.) whole berry cranberry sauce

DOLE Apple, chopped

cup chopped PLANTERS Walnuts

Make It

DRAIN pineapple, reserving juice. Remove 1 Tbsp. pineapple; set aside. Add enough cold water to juice to measure 3 cups; pour into saucepan. Bring to boil. Add to dry gelatin mixes in large bowl; stir 2 min. until completely dissolved. Stir in cranberry sauce. Refrigerate 1-1/2 hours or until slightly thickened.

STIR in remaining pineapple, apples and nuts.

REFRIGERATE 4 hours or until firm. Top with reserved pineapple just before serving.

Substitute

Prepare using JELL-O Cherry Flavor Gelatin.

Special Extra

Garnish with apple slices just before serving.

Molded Cranberry-Pineapple Salad

To serve as a molded salad, substitute a 6-cup mold for the serving bowl. Also, use 1 can (8-1/4 oz.) DOLE Crushed Pineapple, 1/3 cup chopped PLANTERS Walnuts and add enough cold water to the reserved pineapple liquid to measure 2 cups. Makes 10 servings, 1/2 cup each.

I made this salad for Thanksgiving dinner at my mothers. Everyone said it was great. It was so good, that I am making it again for my family. And I`m sure that for our Christmas dinner, It will be served again

Every Thanksgiving I like to play with the ingredients of my old recipes or try some new ones, and I must say that this was the biggest hit of this years dinner! I was opting to make the Jell-O Cranberry Relish, but my family wanted me to try this one when I showed it to them. It was such a hit that they want it again for Christmas dinner. The Jell-O Cranberry Relish recipe will have to wait until next year - that is, if they let me make it. :)

I made this for Thanksgiving dinner and the response at the table was fantastic. I used sugar free Jell-O and everybody loved it. I was told to hang on to this recipe as I'll be asked to make it again!

his is delicious. I added 3 (4 serving packs) instead of 2 to make it more firm. Otherwise I didn't change a thing. No leftovers.

I made this salad for a Thanksgiving Dinner my church sponsored at a senior citizens apartment complex. They loved it. Next year I am going to double the recipe so they can take some home. I used sugar-free cranberry jello and left out the walnuts.
