This turned out very well for me! I did heed the advice from the other reviews, though. One said it was watery, so I let the peppers drain a bit on a paper towel, after chopping and before adding them to the mix. One said it was bland, so I did add a bit of salt. Also added a bit of dill for added flavor, although I don't think it was really necessary. Also used 3 colors of peppers,(green, red, and yellow), as green peppers tend to be a stronger flavor, and I thought it would be overpowering. Very pretty, too! Make sure to refrigerate and let the flavors blend for at least an hour. Served with plain Wheat Thins, and the remainder of the pepper spears. Very Good, and was a hit at New Years!
BUT...if you do have any left over, be sure to use it up the next day, as it does get watery with pepper juice the longer it sits.
