Tasty recipe and didn't take long. Definitely need a big skillet pan. It makes alot. So good for a big family meal.

This is a wonderful basic idea. We did not have the peppers on hand and my one child hates mushrooms so I used extra onions and lean loose country sausage. I also used a dutch oven as it did not fit in my biggest skilllet. It was great, I am thinking about useing chicken next time. I will have to double the recipe, everyone including my picky youngest asked for seconds. It is quick, frugal, healthy, and good.

Instead of red peppers, I used green peppers, lightly seasoned my meat during cook time, and added some sliced beef smoked sausage with the mushrooms. What a beautifully colored dish! And the taste was amazing!!!

This reminded us of one of the comfort food family recipes we make often, but it was better with the cheese!

My kids and husband loved this and it was so easy! I covered the top with shredded provolone and mozzerrella and browned it in the oven for about 5 minutes. Delicious!
