This soup is delicious *and* easy to make! I used a fire-roasted corn salsa instead of the Taco Bell stuff. Topped it with sour cream, shredded cheese, and tri-colored tortilla strips. Soooo delicious!

This soup was wonderful! I have made this twice now. Once when my parents came into town. I wanted a quick and easy meal for when we got home from picking them up at the airport. I was able to make this in the early afternoon and paired it with quesadillas. The second time I made this was a few weeks later for my neighbors after her father passed away. The whole family loved it including her two teenage kids. I was worried since the looks of this soup is pretty "intense", but the flavor is just wonderful.

I make this recipe all the time and everyone loves it! I do make a few changes though: omit the garlic, add one chopped green bell pepper (which I saute with the onion and cumin), and add 1 package of smoked beef sausage. The result is a very hearty, yummy soup!
