I did a few things different and I think it made the prep easier with the same result. After I sauteed the veggies I just added the stock, salsa and drained and rinsed beans. I let them cook a few minutes and instead of blending different cans of beans I just used a potato ricer and mashed throughout the soup. It still thickened up really nicely and we really liked the chunky texture. This is definetly a new family fav. I will make this one again and again. It was so fast and simple.
