I made this in a cabin on a winter outing with friends and we all thought it was a "keeper", however, I did modify it using comments from other cooks. I started with frozen obrien potatoes. I sauted pork sausage and fresh chopped onions together in a seperate pan and added fresh sliced mushrooms a few minutes before stirring into the cooked potatoes. I added fresh chopped tomatoes on top just before serving and served sour cream and salsa on the side.

Agree that it needs more bacon and fewer potatoes: we fried apples and put raisins in them. The fruit cup sounds great for a warmer day. We like color so yellow and green peppers work well too. A mixture of cheeses may change up the flavor once in a while, like colby jack & cheddar for a spicy mix.

Needs more bacon; would be great with cinnamon cooked apples on the side too on a cold winter morning. brrr!

There were too many potatoes in this recipe...also, I had to put ketchup on it to give it the flavor it was lacking.

This is a lot of work and takes a lot of time. The end result is the ruin of a lot of otherwise good food.

I would definately make this again, however, you need some oil when cooking the onions, peppers and potatoes. I used ham instead of bacon, which was good, but the dish needed salt and pepper. Maybe, when using bacon it has enough salt.
