This recipe was great, wonderful alternative to french fries or chips. Shake and Bake mix was seasoned wonderfully and I had my veggies for the day !
I've NEVER liked cauliflower before, but I loved it cooked this way. It wasn't bland like cauliflower typically is. All four of us (including my 12- and 6-year-old girls) loved it and ate seconds and thirds. I'm going to make this recipe regularly. I think next time, I may try zucchini slices.
This was delicious, especially the brocolli and mushrooms (I used baby portabella)! Make sure to reheat leftovers in the oven, or they won't be nice and crispy.
