It has just a bit too much corn in it for my Husband's taste, he suggested refried beans or pea pods. Also, I had to poke some air holes in the tortillas, in my electric oven, the top tortilla puffed up too close to the heating element. BUT, I am making it again tonight, it is very good and very easy.

I was reading my e mail, saw this, ran to see that i had everything and made it, i did have to use some corn tortillas along with the flour and they turned out good also. I will be making this for company you can bet on that.

This recipe was very tasty. It seemed like there was too much corn and too little salsa inside in the quesadillas, so I didn't really follow the measurements in the recipe. I boiled and shredded the chicken and added ingredients as I saw fit. My creation turned out wonderful. I would definitely make this again.

I made this a lowfat meal by using whole wheat tortillas, fat free cheese, and fat free refried beans. VERY GOOD!

So easy, and so good! I like it because it tastes wonderful and is so quick to make. I am 76 years old and live alone. I don't like recipes that are time consuming to make, when cooking for myself. This recipe is easy to cut down for just one person.
