this was a great alternative to potatoes! I didn't get it as creamy as the photo, but it was good anyhow. Got rave reviews from the dinner party! I made this with the green beans and tomatoes Italian and the Easy Skillet Feta Chicken. It was a great meal, also the presentation was beautiful.

This is a good recipe but I did add a few extras to add more taste like cheddar cheese and sour cream.

I was in desperate need of a healthy vegetable side dish, and this one is AMAZING! it tastes just as good as mashed potatoes! (and i even used fat-free mayo and it still is delicious!)

I added more cream cheese, parmesan cheese and a pinch of salt because it seemed a little too bland.

I've made this several times and passed it along to friends. My family can't get enough of it. My 8 year old won't touch caulifower and he actually asks for this recipe. I used a hand mixer and it probably wasn't the right texture but, it was still incredible!

I changed the dill weed to garlic, and the Grated Parmesan cheese to shreaded kraft american it tasted wonderfull and works for my low carb diet.

I left out the dill which helps. One son liked it, the other didn't. You need to use a food processor vs. a regular blender though, to get the texture right. It's a good way to work with "hard to eat" vegetables.
