pkg. (2-layer size) chocolate cake mix

pkg. (8 oz.) PHILADELPHIA Cream Cheese, softened

egg

Tbsp. sugar

can (20 oz.) cherry pie filling, divided

1-1/2

cups thawed COOL WHIP Whipped Topping

Make It

PREHEAT oven to 350°F. Prepare cake batter as directed on package; set aside. Mix cream cheese, egg and sugar until well blended.

REMOVE 3/4 cup of the pie filling for garnish; set aside. Spoon 2 Tbsp. of the cake batter into each of 24 paper-lined medium muffin cups. Top each with 1 Tbsp. each of the cream cheese mixture and remaining pie filling. Cover evenly with remaining cake batter.

BAKE 20 to 25 min. or until toothpick inserted in centers comes out clean. Cool 5 min.; remove from pans to wire racks. Cool completely. Top cupcakes with whipped topping and remaining pie filling just before serving.

I'm making these for my daughter's birthday tomorrow, since she loves chocolate & cherries. I had only enough cream cheese filling & pie filling for 17 cupcakes, but made the rest into plain chocolate cupcakes. It was too full & overflowed. They are cooling now. I think I will do some with chocolate frosting & only put the cool whip & cherries on top as they are served. I was VERY EXACT with the measuring, which took me 45 min. just to fill the cupcake papers after having the cake mixed & the cream cheese mixture made. I just ate a cooled one since I had plenty. :) It was delicious!

Very good combination of ingredients - The cream cheese filling was pretty scarce and I couldn't really taste it in the cupcake. Next time I'll double up on the cream cheese!

This recipe came out tasty and was fairly easy, though you could not make it in advance. Once the cool whip is on the cupcakes, you have to serve and eat them or else they get soggy.

When it comes to the kitchen I am very limited on skill. This recipe was simple and everyone loved the cupcakes. Next time I make this, I am going to try using strawberries instead of cherries.

Sooooooo good! And really easy to make. I made a cream cheese frosting to go on top instead of using the cool whip, but either would be yummy! These cupcakes were a hit with everybody who ate them.
