This was so easy and tasted great. The only problem I had was keeping the rolled up meat and stuffing together when cooking. The meat was moist and the stuffing was great. I used dried cranberries and not as much nuts. A perfect dinner for the fall.

This was so GOOD! I will be making this again. I didn't put the raisins in the dressing (not a big fan of raisins). I also put the fresh rosemary & thyme with honey and brushed it on top. Yum Yum.....

I made this for me and boyfriend one night and both he and i loved it! he is very picky too. He even loved the cranberries in the stuffing. I didnt add as much nuts as the recipe called for, but i did add a little more cranberries. The pork turned out so tender and juicy. I also chopped up fresh rosemary and thyme mixed it in honey and brushed it all over the top of my pork. it gave it a nice look and flavor. I will definitly make this again. My boyfriend even wanted me to give his mother the recipe, which is a huge compliment.

i must have done something wrong because mine was overcooked on top and not done on the bottom. maybe covering it the last half of the cooking time would help. the stuffing is a great fall stuffing though.

The recipe is really good however it called for a 4lbs pork loin and the local grocery store did not have one that big I ended up buying a 1 1/2 lbs loin and cutting it down the middle and placing the stuffing across the top. It still tasted good but I did have alot of stuffing left over. I would make it again just cut the amount in half.

I have made this recipe several times. My husband loves it!! I use toothpicks to hold it together while cooking.

I couldn't believe how moist this roast came out! It was great. I used walnuts instead of pecans, only because I don't care for pecans.
