Easy, healthy, and delicious. My new favorite way to eat acorn squash.
We thought this was very yummy! The toasted nuts added a lot of flavor. It was fun to eat out of the squash half.
I wasn't head-over-heels for this or anything but it wasn't half bad. I got tired of the flavor after a little bit, but my husband LOVED it. It's more trouble than what it's worth, in my opinion. However, if you're trying to impress, it does make for a very visually appealing presentation.
This has become a favorite in our house! I used chopped bacon instead of pecans. I also added bread crumbs to the top to give a little bit of a crunch. The presentation is impressive and it is a great way to get the kids to eat their veggies.
Very good and easy! I made some crumbled up hamburger to add to it. It was really good and filling.
THis was wonderful! My husband never likes veggies like this but even he loved it. I left out the nuts because he doesn't eat them and it was still very good.
I added a few ingredients to make this a bit more flavorful. I added green and yellow peppers, tomatoes and mushroom with a little bit of Italian dressing. Very tasty. At first my husband didn't want to try it....had a little bite and said.."Is there one for me!"
If you don't have small acorn squash, cut it in the middle for more stability and a nicer presentation (i.e. each half stays on top and bottom respectively).
I made this for company and they really enjoyed it! Quite filling as well. I'd recommend sprinkling pecans on top before the final 2 minutes in the oven for an extra special presentation.
I tried this recipe out on my husband, a confirmed squash hater....he really liked it! Hurray! I didn't have pecans or cashews in the house so I used roasted walnuts, and I think next time I'll add some ground turkey or sausage with some spices to "kick it up a notch." Thanks!
